<p><strong>Day 3</strong>  Scan the island-specked horizon on a hike to the mountaintop of <a title="Pender Island" href="http://www.penderislandchamber.com/" target="_blank">Pender Island</a>; kayak peaceful inlets and vast kelp beds of the Salish Sea as we fill our day in the Gulf Islands.  Our senses ever alert for the wildlife of the area— seals splashing in the water, eagles soaring in the sky above, deer rustling through the trees!  We learn the stories of the local peoples living here in centuries past over the evening’s repast.</p>

<p>  The serious issue was the difficulty of balancing protection of the fragile ecosystem around the Gulf Islands area with ever-increasing use of the water and islands by the seven million people who live around the edges of the Salish Sea.  The problems of overuse could easily be seen, but there was also spectacular scenery and magical wildlife appearances reminding everyone of the unique qualities of the B.C. coast.  It was a day when nothing could go wrong.  Tall ships appeared over the horizon with a tanker steaming in the other direction to put the story in context.  Then, of course, there were the whales.  A superpod meeting of three pods of southern resident killer whales (Orcas).  Who could ask for anything more?</p>

On her own she maintaind six customers, calling for orders during her work breaks, baking and delivering in her spare time, but dreams are built on hard work and determination and today she is happy that she didn&#8217;t quit.</p>
<p>From the rented kitchen Melinda&#8217;s Biscotti moved into the first commercial, residential bakery in Sidney, which is a converted garage in their home.
